         For The Filling:

  • 6 - 8 plums 
  • 1/3 cup light brown sugar
  • 2 tablespoons apple brandy
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon

          For The Topping:

  • 1 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 8 tablespoons unsalted butter cubed & cold
  • 2/3 cup heavy whipping cream
  • 1 tablespoon coarse sugar 
  • Vanilla ice cream to serve (optional but highly recommended)

Directions

Step 1

Prepare The Plum Filling

Preheat the over to 375 F. 

In a large bowl, combine the sliced plums, brown sugar, brandy, vanilla extract, cornstarch and cinnamon. Toss the plums gently until the plums are well coated. The cornstrach acts as a natural thickener, ensuring a beautifully textured filling

Step 2

Make the Topping

In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt; set aside. Add the cold, cubed butter. Using a pastry cutter or your fingertips, blend the butter into the flour mixture until it resembles course crumbs. This technique is essential for achieving a delicate, crumbly topping. Add the cream and stir with a fork until just moistened. Be mindful not to overmix to maintain the topping's lightness.

Step 3

Assemble the Cobbler

Pour the plum filling into a greased 9-inch baking dish. Drop spoonfuls of the topping over the fruit, spreading it as evenly as possible. The topping will expand and develop a beautiful golden crust as it bakes, contrasting wonderfully with the tender plums beneath. 

Optional: Sprinkle with 1 tablespoon of coarse sugar for an added crunch


Step 4

Bake to Perfection

Place the cobbler in the preheated oven and bake for 40 - 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges. The intoxicating aroma of baked plums and cinnamon will fill your kitchen.

Ingredients:

  • 3 oz Aperol
  • 3 oz Prosecco
  • 1 oz soda water (club soda)
  • 1/4 cup fresh berries (such as strawberries, raspberries, blueberries, or blackberries)
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lemon or orange slices for garnish

Instructions:

  1. Prepare the Berries :

    • Muddle the fresh berries in a glass or cocktail shaker until they release their juices. If you prefer a smoother drink, you can strain the mixture to remove seeds and pulp, but this step is optional.
  2. Build the Drink :

    • Fill a large wine glass with ice cubes.
    • Add the muddled berries (or berry juice if strained) to the glass.
  3. Pour Aperol and Prosecco :

    • Pour 3 oz of Aperol over the ice and berries.
    • Add 3 oz of Prosecco to the glass.
  4. Top with Soda Water :

    • Add 1 oz of soda water to the glass and gently stir to combine all the ingredients.
  5. Garnish and Serve :

    • Garnish with fresh mint leaves and a slice of lemon or orange.
    • Optionally, you can add a few whole berries to the glass for an extra burst of color and flavor.
