We love a great Charcuterie & Cheese board! We have these at every event we host and they're always a hit! We also change it up each time so it's a bit different. These are easy to put together and we promise you it will be a hit!

Baked Brie With Cherry Coulis

Ingredients

  • 1 wheel of brie cheese
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1-2 tablespoons sugar (adjust for sweetness)
  • 1 tablespoon water
  • 1 teaspoon lemon juice (optional for brightness)
  • Fresh thyme or rosemary for garnish (optional)

Directions

Step 1

Preheat the Oven : Set your oven to 350°F (175°C). Gather ingredients and use either our Brie Baker (purchase at The Lifestyle Lab online store) or a small rounded baking dish or cast iron dish that is heatproof to place in the oven.

Step 2

Prepare the Brie : Un-wrap the brie from its packaging and place in a small baking dish. 

Step 3

Make the Cherry Coulis : In a small saucepan, combine cherries, sugar, and water. Cook on medium heat until the cherries soften and the mixture thickens, about 8-10 minutes. Stir in lemon juice for a touch of acidity.

Step 4

Bake the Brie : While the coulis is cooking, bake the brie in the preheated oven for about 15-20 minutes until soft and gooey.

Step 5

Serve : Remove the brie from the oven, spoon the cherry coulis over the top, and garnish with fresh thyme or rosemary. Serve warm with crackers, baguette slices, or fruit. Top: with pecans nuts for an additional layer of goodness!

Ingredients

  • 1 lb ground beef or a mix of beef and pork
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 12 slider buns or mini rolls
  • 1 slice of your favorite cheese (American, Swiss or Pepper Jack)
  • 1 head of red leaf lettuce cut or tear in small pieces
  • 1 tomato cut up in small slices

Bonus Tip: 1 package of Bacon


Directions

Step 1

Prepare the Meatballs : In a bowl, combine ground meat, breadcrumbs, egg, Parmesan, garlic, salt, and pepper. Roll into small meatballs (about 1 inch in diameter).

Quick & Easy TIP: Costo has some amazing pre-made Italian meatballs that just need warming up. If you decide to go this route, 

Preheat oven to 350°F (175°C).

Grease a 8 x 11 baking dish with 1 tbsp olive oil

Place meatballs in oven to warm for 20 min. 

Step 2

Cook the Meatballs : In a skillet, cook meatballs over medium heat until browned and fully cooked, about 8-10 minutes. Top with a small slice of your favorite cheese the last 1 minute and cover with a lid to melt cheese.


Step 3

Toast the Buns: Line a baking sheet with parchment paper. Butter the buns with 1/2 tsp of garlic butter or plain butter. 

Tip: We love Kerry Gold Butter and their garlic butter is amazing!

Cook: Place on bottom rack and cook for 5 - 7 min until lightly toasted

Step 4

Assemble Sliders : Place one small piece of lettuce and small piece of tomato on the bottom half of each slider bun, place meatball with melted cheese on top of lettuce and tomato. Place the top bun over each meatball.

Bonus Tip: You can cook up some bacon in the oven for 10 min until just slightly crispy and then add to the slider under the top bun.

Step 5

Serving : Place the sliders on your favorite serving plate.

Put condiments in small little glass bowls with serving spoons and label them for guests.

Condiments: We recommend: Dijon mustard, ketchup, Mayo or Garlic Mayo

 

Salmon & Cheese Delightful Bites

Ingredients

  • 1 baguette or crusty bread, sliced into rounds
  • 4 oz smoked salmon, sliced
  • 4 oz garlic and herb cheese spread
  • 1 cucumber, thinly sliced
  • Fresh dill or chives for garnish
  • Salt and pepper to taste
  • 1 lemon 

Step 1

Preheat: oven to 350°F (175°C).


Prepare the Bread : Lightly toast the baguette slices for a crisp base. Cut the baquette into small thin rounds, Butter the toast and place in oven for 5 - 7 min 

Step 2

Add Cheese : Remove from oven and let cool. Spread a thin layer of cream cheese or herbed cheese on each slice. We prefer a garlic and herb cheese.

Step 3

Layer with Salmon : Cut the Salmon into smaller pieces and then place a piece of smoked salmon over the cheese spread.

Step 4

Top with Cucumber : Add a thin cucumber slice on top of the Salmon. Give each salmon bite a little squeeze of lemon (lightly).

Step 5

Garnish : Sprinkle with fresh dill or chives, and season with a touch of salt and pepper.


This elegant appetizer is ready to serve and makes a perfect addition to any holiday or dinner party spread!
